Featured Recipe: Tinolang Manok!

It's been exactly two weeks since I last posted something here because of the commemoration of the Holy Week here in the Philippines last week and the fact that I have become too busy with work. I am so sorry for that. I just think that I needed the time to have a hiatus in blogging to refresh my mind a little bit. I did not actually missed blogging though, I am blogging at my TV blog that will soon be having it's soft launching. Thank you very much for understanding me. Anyway, it's time for me again to post my featured recipe for this day.

Before anything else, some FYI here. I had Tinolang Manok (a chicken soup dish cooked in ginger) this noon at lunch in our office canteen. I just remembered a while ago that I have a recipe of this in my hard disk so I posted it here. It's one of my favorite soup dishes by the way! Hehehe... The recipe is from my old recipe blog. This tinolang manok recipe is my own way of cooking it. I hope you enjoy cooking it and afterwards, enjoy eating it. Thank you very much for visiting. (Recipe after the click.)

Ingredients:

1 kilo chicken, chopped
1 medium-sized onion, chopped
4 cloves of garlic, chopped
1 medium-sized ginger, sliced into strips
1 small green papaya, cut into pieces
1 piece Knorr™ chicken cubes
3-4 cups water or hugas-bigas or chicken broth
patis or fish sauce
dahong sili (sili leaves)
cooking oil
salt

How to Cook:

1) Scrub each pieces of chicken with rock salt to lessen the smell (lansa) of the chicken. After a few minutes, wash it carefully. Make sure that you remove the slippery part of the chicken and its fats. Drain the chicken and pour in enough amount of fish sauce or patis. Put also the papaya slices in this marinade.

2) Heat some oil. Sauté ginger, garlic, onion, chicken and papaya. Cover it and let it boil (sangkutsa) for a while (about 5-7 minutes) to extract the flavor and taste of chicken and ginger.

3) Pour in 3-4 cups of water (or hugas-bigas or chicken broth) depending on the desired amount of soup. Bring to a boil until the papaya softens.

4) Taste the soup. Put in a pinch of salt (if necessary) and a cube of Knorr™ chicken cubes to make it more tasteful. Put in the dahong sili (sili leaves) and simmer for 2 minutes. Serve it hot.

:: Makes 6-8 servings.
